Crispy Batter for Fish & Chips

For really crispy batter, use 1/2 pint normal flour (abt a tall glass), add beer (about 2/3 of the same glass) and 1 egg yolk -- whisk. Whisk the egg white seprately until stiff (ie will not pour out if you tip the bowl over your head!). The egg white will make for a really crispy batter!

Use fresh fish fillet (tail end), then fry in hot fryer 180%C together with the potato chips that has been blanched in boiling water for 5 min. Put in the chips first, then add the fillet after a few sec.

For the greens or salad, fry in a pan a single stem of chopped spring onion, fresh chopped mint, then add frozen green peas 500g, cook for 3 min. Then put in blender and add 2 dollops of butter, then whisk. Season with salt.
