Singapore Famous Pepper Crab

First under hot heat stir fry quartered mud-crabs for 2 minutes.

In a separate wok heat up about 2-3 tbl oil, then add minced garlic, about 1-2 tbl. Don't let the garlic brown, so watch it as it is minced. Then add 1 tbl cracked black peppercorns, and 5-10 sec later add equal amount of cracked white peppercorns. The white peppercorns have less heat than the black ones, and balanced the the black pepper. Observe as the garlic becomes browned (about 45-60 sec), then add 1 tsp of sugar.

When the mixture is fragrant, add the crab pieces, and stir fry for 1-2 minutes. Then increase the heat a little, season with a pinch of salt, and add the beaten eggs (probably 2-3 eggs, depending on the amount of crabs).The eggs help to bind the peppers to the crab pieces, as well as add texture. Garnish with fresh coriander and green and white thinly shredded / sliced scallions.

Note:The amount of ingredients were not mentioned, neither the timing at each stage. So the amounts and timings were my own estimates based on the TV show. I never imagined how easy it is to prepare such a tasty dish!
