Marinade for 0.5 kg mutton (best) or beef
Blend together:
5 shallots
5 garlic
tumeric - 1 inch
coriander 1 tsp
candlenut (buah keras) 3
limau perut or skin of 1/2 fruit
salt/sugar -- to add during cooking, not during marinade or water will
be extracted from meat
marinade for 30 minutes before frying (if marinaded overnight, taste is
different)
variation:
fry big onions in hot oil before adding marinaded meat,
or fry small amount of spice mix, then add marinaded meat.
Toto Prawn Bee Hiam
dried prawns 200 gm, soak and pound, don't blend
Blend together in blender:
shallot 15 pcs
garlic 2 heads
blanchan 2x2-inch
chilli padi -- use all if u like it hot
sugar, 1 ts to taste
No SALT
Fry until dry.
Can keep 2 months in fridge.
NOTE:
1. Added 3 tsp salt+5 tsp sugar (the plastic spoons in the resp
bottles). The limau peruk leaves were frozen, so soak for few min in
water, por away water, cut with scissors. then add to blender with
little water.
2. Added several tsp of sesame oil and olive oil so can blend better.
3. Heated the coriander seeds in microwave, use 50% powerlevel, for 3
min. in mug. Added to blender. Maybe better to grind in mortar?
4. Grill under both top n bottom heaters for 19 min, then 1-2 min
microwave.
Verdict : taste great.
