When you are in a hurry -- and time is of the essence -- a noodle meal can be prepared quickly in under 10 min !
Boil rice noodle in boiling water for about 7-10 min - test for doneness by trying a strand or two - and pour the following sauce over it:
Marinade
2 tbl fish sauce
2 tbl chili sauce
2 tbl peanut butter - I use crunchy peanut butter
1 tbl sugar
1 tbl sesame oil
enough hot water and stir to make a thick gravy-like sauce, no need to add corn-flour!
Add some greens, such as chye sim or bean sprouts, and maybe roasted pork if you have on hand, and you have a delicious satisfying noodle meal within minutes!
