Pork Burger with Fennel

Inspired by a TV program featuring Bill's Food, adated to suit local ingredient availability / quantity:

316 gm minced pork $2.65
3 stalks fresh coriander, diced (leave out roots)
3 stalks spring onion, diced
1/4 large onion, grated
3/4 ts fennel powder
3/4 ts salt

Mix all the ingredients together and for into 4 equal patties.

Grind fresh black pepper onto the 1/2-inch thick patties. Or you may use 5-spice powder instead of pepper.

Put a little oil - enough to swill around - onto a hot pan and turn heat to low. Cook patties 3 minutes, turnover then cook 4 minutes.

Rest patties 10 minutes - to allow juices to settle - before digging in.

Verdict: The cooking time was perfect: patties were still moist, yet cooked through. And the taste was sensational, according to Add.
