Cardamon Bread

There was no bread in the pantry.  So I thought today would be a good day to try out the cardamom bread.

Ingredients:

2 cups plain flour
1 cup wholemeal flour
2 ts green cardamom pods
3 cups sugar
1/2 ts salt
1 egg
1 cup milk
1/4 cup veg oil
2 sachets instant yeast

Crush the cardamom pods in a mortar and remove the seeds from the pods.  Warm 1 cup milk (I used pasteurized whole milk) in a mw oven for 30 sec under normal setting.  Add the yeast and 1/4 cup oil.  The recipe called for butter, but I used cooking oil as I had run out of butter !  Add 1/2 ts sugar to the milk to kickstart the yeast frothing.

Mix the dry ingredients together - flour, sugar, salt, cardamom seeds.  Beat the egg lightly and add to the dry mix.  Then spoon in the milk mixture in batches, incorporating the milk into the flour, until the entire milk has been added.
Knead for 5-10 minutes.

As the dough was quite sticky, I decided to straight away put the entire dough into a cake tin to rest and rise for 1 hour, covered with a cloth.  Sprinkle 2 ts of sugar evenly over the bread before putting it into the oven.

Set the oven to 175-deg C and bake for 20-25 minutes.  Within 15 minutes the lovely cardamom aroma wafted into the kitchen.  I decided to wait until a nice dark brown color has developed on the bread top before switching off the oven.  This was my first bread-making attempt and I certainly didn't want an under-baked bread !

Wow - the aroma is certainly tantalizing !

Taste Test

The bread turned out a bit crumbly instead of firm and chewy.  Guess the kneading time was insufficient to make the gluten more chewy.

As for taste, I could taste the cardamom seeds.  Probably would taste better if I had *crushed* the seeds instead of leaving them whole.

Overall, taste ok.  Except I am not raving about it !

I will most definitely make the cardamom bread again to see if I will like it better.

Original Recipe       Modified for Bread Machine
¾ cup milk
½ cup milk
¼ cup butter
3 tablespoons butter
1 egg
1 egg
1/3 cup sugar
¼ cup sugar
½ teaspoon salt
½ teaspoon salt
3 cups flour
2¼ cups flour (bread flour)
2 teaspoons yeast
1½ teaspoons active dry yeast
1½ - 2 teaspoons cardamom
1½ teaspoons cardamom
(3 teaspoons if using powder)
  1. Microwave milk and butter for approximately 50 seconds
  2. Make dough using all ingredients (manually or with bread machine on "dough" mode)
  3. Divide into 3 rolled strips, cover with cloth, and allow to rest for 10 minutes
  4. Braid dough and top with light sugar coating (not included in above ingredients)
  5. Allow to rise for 40-50 minutes under plastic wrap
  6. Bake at 350 for 18-20 minutes
  7. Remove from oven and place on cooling rack
 Cardamom bread is good toasted or plain, buttered or not. If you're
like me, you won't be able to limit yourself to just one or two slices.:-)
