Try this recipe - it is sublimely delicious!
You need 6 Japanese or Thai aubergines, halved lengthwise. Or you may use our big, local brinjals. Then steam or microwave the brinjals until tender, about 10 min if you steam. Test with a fork.
Dressing:
1/2 ts palm or brown sugar
1 tbl fish sauce
1 tbl soy sauce
juice 1/2 lime
4 garlic cloves, finely chopped
1/4 ts red chilli flakes
1 ts prawn powder
2 tbl sesame oil
Garnish:
coriander sprigs
4 spring onions, finely chopped
Combine all dressing ingredients in a jar, close the lid tightly and shake well. Spoon over the steamed aubergines.
Serve at room temp or warm garnished with above. Enjoy !!
