Deep Fried Honey Lemon Chicken in Shallot Paste

Ms Solomom, a Filipina friend and sister of Add's landlady back in the late 70s when we were students in Manila, visited and stayed in Singapore for a while in 1980. It was then she introduced a most delectable recipe for fried chicken wings to my dear wife. Since then we could never forget the taste. Alas, no matter what we do we could not replicate the recipe nor the taste.

All we recall were the ingredients, not the proportion!

This then is another attempt to re-create the recipe.

Ingredient:
4 chicken thigh, remove skin, bones and cut into bite-sized pieces

Shallot Paste:
Onion paste, 4 T
Juice from 2 lime, squeezed
Salt, 1/2 tsp, Honey 3-4 Tbl, to taste
Marinade for 3-4 hrs in fridge
Dip in glutinous rice flour batter before deep frying
