Yum Ma Kua
1 large purple brinjal - cost $1.4 to 1.85 each depending on season and weight
Dressing
1/2 t palm or brown sugar (same - 1/2 t)
1/4 t red chilli flakes (same - 1/2 t)
1 t prawn powder (I used 1/4 t)
1 T light ss (1/2 T)
1 T fish sauce (1/2 T)
2 T sesame oil (1 T)
juice of 1/2 lime (same)
Garnish: Coriander sprig, 4 spring onions finely chopped
The quantities are for 6 aubergines, halved length, to serve 6 persons. In my case I reduced the quantities accordingly as the brinjal I had on hand was 10-inch in length, more than sufficient for 2 persons.
I microwave the halved brinjals on high power until soft, but not mushy (about 6 minutes). Spoon the dressing over the brinjals when they have cooled.
