Ingredients:
use 1 emperor herbal spice package
Method:
Rub the chicken inside and out with the spice powder and let it marinade for 30 minutes. Meanwhile, boil the herbs in a pot for 15 min on the stove-top.
After 30 minutes, place the chicken on the plastic sheet, stuff all the herbs inside the chicken cavity, add 4 tbl rice wine to the chicken, tie the 4 corners of the plastic wrap tightly together, then wrap with the aluminum foil.
Set the oven to 175-deg C, timer to 1 hr, place the wrapped chicken in a casserole, put water in the cassrole, and set it in the oven.
After 1 hr, remove the plastic wrap, check that the oven temperature is 175-d C, and roast for 20 min. After that, turnover the chicken and roast for a further 15 minutes. Total roasting time is thus 35 minutes, plus 1 hr "steaming" inside the plastic wrap in the oven.
Take out the casserole from the oven, and add 2 tbl oyster sauce plus 1/2 tsp salt (to taste) to the gravy on the aluminum foil.
Carve the chicken only after another 30 min "rest" fr the juice inside the chicken to rest.
Verdict: Wonderful aroma and taste delicious.
