Steamed Red Snapper with Ginger and Scallions

Steamed Fish - 1 whole red snapper, cleaned and scaled. Slice the snapper flesh to ensure even steaming. Stuff ginger strips and spring onion into fish slits. Add chili peppers, unseeded, 1 salted plum. Steam for 8 min, depending on fish size. Pour away the liquid only after steaming, retain the other ingredients.



Separately fry 1 tbl oil and 2-3 roughly chopped garlic clove until brownedand aromatic, but not burnt. Spoon hot oil onto the steamed fish to which has been added fresh ginger strips and spring onion. Heat soya sauce and pour onto steamed fish. Garnish with fresh coriander and spring onion.

Verdict: If your fish is fresh, it will taste sweet and wonderful and be tender. Older fish lose their natural sweetness, and obviously over-cooked or frozen fish is hardly tasteful.
