Thai Basil Chicken Yes, no tom yum paste, that detracts from the taste, though AD loves to add tom yum paste!
2 chicken thigh, minced roughly to maintain texture
1 red onion
4-5 red chillies, sliced
1-2 small green chillies, sliced - less spicy than chilly padi
2 garlic, sliced
Fresh Thai basil, handful
1. Fry garlic in oil
2. Add red onion, red chillies, green chillies
3. Add minced chicken
Finally splash Tiparos, maggi seasoning (not powder)
Just before dishing up into a plate, add the chopped fresh Thai basil, fry lightly and serve. Do not fry the basil leaves too much as that will dissipate the aroma.
