Bombay Potato

Must try this ! Not sure if the recipe is correct, wrote down after watching program...

Warm 3 tbl sunflower oil in pan, add: 1 tsp ground coriander, 1 tsp ground tumeric, 1 tsp garam masala, 1 tsp ground chilli, t tsp black mustard seed, ground cumin (just a pinch because cumin has tendency to overpower the other spices). Fry over medium heat.

Separately boil potatoes in hot water for 8 min, then peel skin. Cut into bit-sized cubes, and add into spice mixute in the pan. After a few minutes grate 1-inch fresh ginger into the pan, add 2-inch butter and cook for a minute.

Finally add 2 fresh tomatoes cut into 3/4-inch cubes and finely-chopped fresh coriander (that was the recommendtion of the guest, when Jamie added the coriander roughly chopped) and cook for a further 30 sec.

The aroma is sure to fill the kitchen!
